For one thing, okra is grand. It should be pickled and one would lack morals if they didn’t.
The primary concern about pickling okra is getting an immature fruit. When an okra fruit matures, it has a higher cellulose concentration, leaving is difficult to eat. The human body cannot digest cellulose, but can use it like liquid plumber. The main problem with mature okra is that chewing it is like chewing on a stick.
I did not know that about okra. Perhaps one day I will grow and pickle my own, and I will be able to offer sage advice on the subject. In the meantime, I must purchase my okra pickles in a jar from the store. =/
